Enoteca started operating in July 1994 in a small house in Vrilissia, Athens.

Its owner,
Kostas Touloumtzis, who has also been the founder and President of the Panhellenic Association of Sommeliers since 1997, has a bachelor's degree in Information Technology from the University of Pisa and was the owner of a restaurant in this small town of Tuscany for fifteen years.

A restaurant with a very comprehensive wine list, a great part of which were moved to Athens, thus placing Enoteca at the top of the restaurants offering a wide selection of wines right from the start.

Enoteca''s philosophy is based on the fact that unfortunately modern Greeks do not consider wine as the unique complement to food, thus accompanying their meals with drinks like beer, alcoholic beverages and various refreshments. The need to restore wine's prestige in Greece has led Mr. K. Touloumtzis to adopt a somewhat "particular" attitude towards his customers, by obliging them to select first the "dominant" wine and then a dish to serve as "accompaniment to wine".

This philosophy has given Enoteca a very special character, which in combination with a series of activities aiming at the propagation of the wine culture among consumers has turned it into a point of reference for all wine aficionados.
